Date

The chef duo Michal Daněk and Petr Židek from Alma will be visiting Šumperk, specifically the restaurant at Hotel Perk, where they will create an autumn-inspired dinner. You can expect an extraordinary menu filled with the seasonal flavors of fall.

MENU:


Amuse-bouche 

  • Puff pastry basket, cheese ganache, lovage flowers, lovage ketchup, St. John’s nut  
  • Crispy basket, sour cream, trout tartare, nasturtium  


Starters

  • Venison tartare, black garlic emulsion, larch cones, elderberry, lovage powder, toast  
  • Marinated beetroot, calamansi dressing, green strawberries, rosemary-infused celery crumble  


Mains

  • Roasted lamb loin, lamb jus, cranberry umeboshi, elderflower buds, Sichuan pepper  
  • Whole deboned grilled trout, yeast beurre blanc  


Sides

  • Grilled kale, apple-yuzu dressing, green strawberries, horseradish  
  • Charred leek, hazelnut dressing, rye crumble, wild capers  
  • Hasselback potatoes, truffle crème fraîche, truffle  


Dessert 

  • Apple tarte tatin, beer ice cream, spiced cider with rooibos, cardamom, buckwheat  


Petit four

  • Fennel pâte de fruit, citron, popping sugar  
  • Chocolate basket, quark, apple marmalade, chocolate nibs
